How to make taco tator casserole

Put a twist on Taco Tuesday with this super simple, eat every last bite, lick the plate, casserole. This recipe comes up with the perfect combination, too. Spicy meat and crunchy, cheesy tater tots. Tacos will never be the same after this, my friends.
Of course, since this is a casserole, prep time is mere minutes. You just have to brown and mix your beef then layer it all up in the pan before it's ready to bake. While it's baking for about an hour you also have plenty of time to whip up and enjoy some margaritas.

Taco tator casserole
Prep time: 15 minutes
Cook time: 1 hour
Total time: 1 hour 15 minutes
Serves: 4
1 lb ground beef
1 (2 ounce) package taco seasoning
1⁄4 cup water
1⁄2 medium onion, diced
1 (10 ounce) can whole kernel corn
1 (12 ounce) jar salsa con queso
1⁄2 lb tater tots
1. Get a jump start by preheating your oven to 350 degrees
2. Brown the ground beef and onion together in a skillet - be sure to drain the extra liquid.
3. Stir in the taco seasoning and water and simmer according to package directions
4. In a 13 x 9 casserole dish, spread out the taco meat across the bottom of the pan
5. Cover the taco meat with the corn
6. Then place tater tots in a single layer on top of the corn
7. Spread the salsa con queso on top of everything.
8. Pop it in the oven and cook for an hour
Pro tip: Add some freshness to the dish with a dollop of cold sour cream and some chives to top it all off. And if you like a little kick, we suggest some fresh chopped chilli's too.
