How to make Jalapeno popper casserole

When grilling, I often throw a few cheese-stuffed, bacon-wrapped jalapenos on first as a quick and easy appetizer. They’re often my favorite part of the meal! This casserole keeps the tasty flavor of the app but requires no fussy stuffing or rolling. Whether you’re looking for a scrumptious side, a crowd-pleaser for a potluck, or a delicious party dish, this melty, creamy, spicy casserole is just what you need.
My version of this casserole uses a combination for green bell pepper and jalapeno for a stronger pepper flavor without too much heat. Seasoning the hash browns well is essential.

Jalapeno Popper Casserole

1 lb. (450 g) hash browns
1/2 teaspoon (4 g) salt
1/4 teaspoon (.5 g) black pepper
1 teaspoon (2 g) paprika
1 teaspoon (2 g) chili powder
1 8 oz. (225 g) pkg. cream cheese
1 cup (240 ml) sour cream
1 lb. (450 g) bacon, cooked and crumbled, 1/2 cup reserved
4-6 jalapenos seeded and diced
1 green bell pepper, seeded and diced
2 (200 g) cups shredded pepper jack, 1/2 cup reserved
6 green onions, thinly sliced
Heat oven to 425°. Coat a 9x9 baking dish with cooking spray. Toss hash browns with salt, pepper, paprika, and chili powder; spread evenly in baking dish. Bake at 425 for 15 minutes.
Blend next 7 ingredients (except reserved bacon and cheese); spread over hash browns and bake another 10 minutes.
Top with reserved cheese and bacon and bake another 10 minutes.
Pro Tip: Make this casserole into a satisfying meal by adding a layer of cooked shredded chicken between the hash browns and cheese layer.
