How to make pork chops in a slow cooker

There is nothing more comforting than these creamy tuscan style pork chops. Sun dried tomatoes, spinach, garlic and cream make the most perfect combination of flavors. You will think that you're eating al fresco under a Tuscan sunset! Serve this at your next dinner party and you will have some very happy guests!
Let's start with the base of your sauce. In order to achieve a rich and silky sauce, start off by whisking cream and chicken broth with cornstarch right in your slow cooker. Next, add your layers of Italian flavors such as sun dried tomato, onions, garlic and Italian seasoning. Before adding your pork chops, I recommend searing them in a pan. This will add lovely flavor and color to your pork chops. Drop in your pork chops and let your slow cooker do its work! Near the end of cooking, stir in a couple dollops of sour cream and parmesan cheese for some extra sultry flavor. Finally, fresh spinach and tangy lemon zest round out the rich flavors of this delectable dish!

Slow cooker Tuscan style pork chops

1 cup sour cream
1½ cup chicken broth
2 tablespoons cornstarch
2 tablespoons tomato paste
1 cup thinly sliced yellow onions
4 cloves garlic, smashed
1 cup roughly chopped sun dried tomatoes
1 tablespoon italian seasoning
2 pounds pork chops
2 teaspoons salt
2 teaspoons black pepper
4 tablespoons parmesan cheese
2 cups spinach, washed
1 teaspoon lemon zest
In a 6-quart slow cooker, whisk sour cream, chicken broth and cornstarch until smooth. Whisk in tomato paste. Stir in onions, garlic, sun dried tomatoes and italian seasoning. Season pork chops with salt and pepper and submerge into sauce.
Cook on high for 4 hours or on low for 6.
After cooking, remove pork chops and stir in parmesan cheese, spinach and lemon zest, keep stirring till the heat gently wilts the spinach. Return pork chops to slow cooker and serve.
Pro Tip: Sear your pork chops before adding them to the slow cooker. Set a large skillet to medium high heat and add 2 tablespoons olive oil. When oil is hot carefully sear pork chops, about 2 minutes per side or until golden brown.
