How to make meatballs in a slow cooker

These spicy chipotle meatballs will knock your socks off! And so easy to make! These are the perfect party snacks for the next birthday, pool party or tailgate. The chipotle chile powder adds a wonderfully smoky flavor with just the right amount of spice. The cilantro cream dipping sauce adds an amazing creamy zip the the meatballs. They are so good that you may just need to make extra for those hungry mouths!
You will first need to mix and form the meatballs. I like to use equal parts ground pork and extra lean ground beef for more depth of flavor. Don't forget the cool and creamy dipping sauce! Sour cream, cilantro, lime juice and cumin make this sauce the perfect compliment to the spicy meatballs. Enjoy!

Slow cooker Chipotle meatballs

1 pound ground pork
1 pound extra lean ground beef
5 cloves minced garlic
¼ cup breadcrumbs
2 whole eggs, scrambled
1½ tablespoon chipotle powder
1½ tablespoons salt
1 can diced tomatoes
In a large mixing bowl, combine all the ingredients from ground pork to salt. Mix thoroughly until all ingredients are evenly combined. Form meatballs 1 inch in diameter. Then gently place into slow cooker.
Pour diced tomatoes over meatballs.
Set slow cooker to high and cook for 4 hours.
Tip: Serve with cilantro cream dipping sauce: In a small mixing bowl combine 2 cups sour cream, ½ cup finely chopped cilantro, 1 teaspoon cumin,1 tablespoon lime juice and 1 ½ teaspoon salt
