Print this recipe
Tender juicy ribs are one of the world’s best foods, but if you make them the old-fashioned way—in a smoker—they’re a high-maintenance project. The recipe below shows why the slow cooker is the perfect solution, roasting the meat with gentle heat so it’s tender, juicy, and infused with flavor.
Garlic, ginger, and green onion infuse these ribs with a perfect balance of savory aromatics to balance the sweet sticky sauce. This recipe requires a few different cooking methods, but very minimal work.

3 hours, 45 minutes
2 1/2 lbs. (1.15 kg) spareribs
3 cloves garlic, minced
1 piece fresh ginger, peeled and grated
3 green onions, thinly sliced
3 tablespoons (45 ml) hoisin sauce
2 tablespoons (30 ml) soy sauce
1/4 cup (60 ml) mirin, sake, or lager
3/4 cup (180 ml) chicken broth
2 tablespoons (16 g) cornstarch
1/4 cup (60 ml) water
2 tablespoons (30 g) brown sugar
2 tablespoons (18 g) sesame seeds, plus more for garnish
Cut spare ribs into 2 or 3 large pieces to fit into 7-quart slow cooker. Add garlic, ginger, green onion, hoisin, soy, mirin, and broth. Toss to coat ribs.
Cook on high for 3 hours.
Heat oven to 325. Remove ribs from slow cooker and set aside.
Pour remaining juices into a sauce pan. Stir cornstarch into water until fully dissolved, then add to pan along with brown sugar, and sesame seeds. Bring to a boil, reduce heat to low and cook for 1 minute or until sauce is thick and sticky.
Baste sauce onto ribs.
Bake at 325 for 15 minutes. Allow to cool for 5 minutes before serving garnished with additional sesame seeds.
Pro Tip: To give these ribs a spicy kick, add 1 teaspoon of flaked red pepper in step 1.
