How to make slow cooker white beans and sausage

Sometimes you just want a simple meal that doesn't involve any muss or fuss. That's exactly what the recipe below gives you. You can sear the sausages as I did, or if even that seems like a lot of work, you can throw them in raw. After that, everything goes into the crock pot and simply simmers away while you sit back and relax.
Another great thing about this dish is that it gives you everything you need in one pot. No need to make additional rice or potatoes, as the beans will do the job of filling you up and help give the sausages a boost of protein. And if you're looking for some veg, the diced tomatoes will do the trick (without us getting into the whole fruit vs. veg debacle.) Simple, comforting, and good for you.

White Beans and Sausage in the Crock Pot

2 tablespoons olive oil
6 Italian sausages
1 14 1/2-ounce can diced tomatoes, with juices
1 15-ounce cannellini beans, rinsed and drained
1 onion, sliced
3 cloves garlic, minced
2 tablespoons fresh sage, roughly chopped
Salt, to taste
Freshly ground pepper, to taste
Heat olive oil in a large skillet set over medium-high heat. When hot, add Italian sausages and brown on all sides. When sausages are browned, place in the bottom of a 6-quart slow cooker.
In a large bowl combine the remaining ingredients. Pour over the sausages in the slow cooker.
Place lid on slow cooker and cook on low for 7 hours or on high for 4 hours.
