The recipe below is sure to be a family favorite. Sweet and sour ground chicken cooked slowly in a sweet honey soy sauce and served in lettuce cups are the perfect party dish. It's as easy as throwing everything thing in your slow cooker and 3 hours later you have a wonderful sweet and sour chicken filling. Be sure to break up the chicken when you mix in the carrots. Finally serve up right inside the butter lettuce cups. The lettuce cup acts as a cool and crisp edible delight for the delicious chicken filling and the carrots give it that great crunchy texture. Have fun with this one!

Slow Cooker Chinese Chicken Lettuce Wraps

2 pounds ground chicken thigh
3 tablespoons honey
1 medium onion, small diced
1 tablespoon sambal or sriracha
1 tablespoon minced fresh ginger
2 tablespoons lemon juice
½ cup soy sauce
1 cup thinly sliced carrots
16 medium sized pieces butter lettuce or romaine lettuce
½ cup thinly sliced green onion
In a 6 quart slow cooker, add in everything from ground chicken to soy sauce. Break up chicken with a fork.
Cook on high for 3 hours.
Add in carrots and mix well.
Serve cooked chicken mixture inside pieces of lettuce to make a cup. Garnish with green onions.
