Unlike most goods kids when I was young I actually loved eating broccoli. Just steamed plain, it was something I just really enjoyed. My brothers on the other hand always needed something else to go with it. The recipe below is inspired by my moms cheesy broccoli she made for my brothers.
I keep the recipe really simple with just 5 ingredients plus salt and pepper. I start with broccoli, cream cheese, salt, pepper and chicken broth. You can use vegetable broth to keep the dish vegetarian if you prefer. The broccoli slowly cooks until tender then cheddar and sour cream are added to turn the soup into a creamy cheesy delight.
