How to make honey glazed carrots in a slow cooker

Print this recipe
Honey glazed carrots are the perfect match to any main dish. I actually even like to have a big bowl of them all by themselves with an extra squeeze of lemon juice. In the recipe below you can use either fresh or dry thyme, I like to use fresh thyme specially for this recipe. It goes so well with the sweetness of the honey and the tartness of the lemon juice.
I like to cut the carrots just a little bigger than french fries. Those are then added to the slow cooker with honey, thyme, water, butter, salt and pepper. Yep that's all! I add in the lemon juice once it's all cooked to brighten up the carrots and balance out the sweetness. Fresh chopped parsley at the end livens up the dish and they're done!
