How to make triple chocolate brownies in a slow cooker

You can never have too much chocolate. These brownies are proof. They’re called triple chocolate, but they actually packed with four different iterations of the world’s best ingredient: cocoa powder, melted bittersweet, and two kinds of chocolate chips. The result is rich and decadent. I especially love making the recipe below in the summer when it’s too hot to turn on my oven.
The mixture of white and semisweet chips provides a pleasing contrast of colors and flavors in these decadent brownies. I like to save a few of each to press into the top of the batter for decoration.

Triple Chocolate Brownies in the Slow Cooker

Cooking spray
1 1/4 cups (175 g) all-purpose flour
1/4 cup (25 g) unsweetened cocoa powder
3/4 teaspoon (3 g) baking powder
1/2 teaspoon (3 g) salt
1/2 cup (1 stick, 115 g) unsalted butter, cut into pieces
8 oz. (225 g) bittersweet chocolate, chopped into chunks
1 cup (200 g) sugar
3 large eggs, lightly beaten
1 teaspoon (5 ml) vanilla
1/2 cup (90 g) white chocolate chips
1/2 cup (90 g) semisweet chocolate chips
Line a 4-5 quart slow cooker with a large sheet of aluminum foil or parchment paper. It should cover the bottom and extended at least half way up the sides. Spray liner with a thin layer of cooking spray.
Place flour, cocoa powder and salt in a small bowl and whisk to combine.
In a medium microwave-safe bowl combine butter and bittersweet chocolate. Microwave for 30 second intervals, stirring in between until completely melted, 1-2 minutes total.
Stir sugar into chocolate mixture. Whisk in eggs and vanilla.
Stir flour mixture into chocolate mix until just combined. Fold in both kinds of chocolate chips.
Pour batter into prepared slow cooker. Use a spatula to smooth the top. Lay a sheet of paper towel over the opening and cook for 3-4 hours, until set but still slightly gooey in the center.
Remove insert from crockpot and place on a wire rack to cool completely. Then use liner to lift out brownies.

Pro Tip: To ensure an even cook, lift out the slow cooker insert, rotate 180°, and set back in heating element halfway through cooking time.
