How to make Greek chicken and pita casserole

All of the flavors of your favorite Greek pita sandwich come together in the recipe below, a casserole combining chicken, tomatoes, olives, and, of course pita bread. A sprinkling of feta cheese over the top is the perfect finishing touch.
While this recipe can easily be made with fresh pita bread, it's also a great way to use up any leftover or stale pita bread.

Greek Chicken and Pita Casserole

4 cups chopped cooked chicken
1 10 3/4 ounce can condensed cream of chicken soup
1 medium red onion, finely chopped
1/2 cup chicken broth
1 1/2 teaspoons Greek seasoning
2 6-ounce pita rounds, cut into bite-sized pieces
1 tablespoon olive oil
1 cup chopped tomatoes
1 cup crumbled feta cheese
1/2 cup pitted kalamata olives
Preheat the oven to 350 degrees.
Stir together the chicken, soup, onion, broth, and half of the Greek seasoning. Transfer to a casserole dish.
Toss the remaining Greek seasoning, pita pieces, and olive oil together. Sprinkle them over the top of the casserole.
Bake uncovered for 20 minutes, until heated through.
Sprinkle with the tomatoes, feta, and olives, and serve immediately.
