Next, add red beans, chicken broth and Cajun seasoning, and give it a good mix. The chicken broth brings all the flavors together. Instant rice is added near the end of cooking. Stir it in and let it plump up. It only needs a few minutes. Serve this dish with a side of sweet pepper sofrito for a full meal.

2 pounds ground beef
1 15-ounce can chicken broth
1 15.5-ounce can red beans
1 tablespoon Cajun seasoning
3 cups instant rice
Salt and pepper to taste
In a large skillet on medium-high heat, brown and crumble ground beef until cooked through. Strain off fat. Season with salt and pepper.
Add chicken broth, cooked ground beef, red beans and Cajun seasoning into a 6-quart slow cooker. Cover and cook on high for 2 hours.
Stir in rice. Cook for 30 more minutes.
