Southern Potato Salad

3 pounds russet potatoes, peeled and cubed
1 cup celery, small diced
¾ cup onion, small diced
5 hard-boiled eggs, cut into small pieces
3 tablespoons sweet pickle relish, drained
¾ cup mayonnaise
2½ tablespoons yellow mustard
1½ tablespoons sugar
½ teaspoon paprika
2 teaspoons salt
¼ teaspoon pepper
Bring a large pot of water to boil on high heat. Add 1 teaspoon salt.
Carefully add potatoes to the boiling water. Cook for 10 to 20 minutes, until potatoes are tender. Don't overcook the potatoes; check frequently for doneness.
When potatoes are done, drain and run under cold water until they are completely cool.
In a large bowl, mix celery, onion, eggs, relish, mayonnaise, mustard, sugar, paprika, 1 teaspoon salt and pepper.
Fold in potatoes.
Garnish with extra paprika and fresh chopped parsley if desired.
