Old-fashioned chicken & dumplings

Ingredients
14 cups homemade chicken stock (can use store-bought, but the flavor won't be the same)
5 cups cooked chicken shredded (can use the chicken you used to make the chicken broth)
2 cups all-purpose flour, additional flour for rolling
4 tablespoons butter, melted
½ cup to ¾ cup chicken stock
Salt and pepper to taste
Directions
1. Bring chicken stock to a boil in a large pot.
2. Meanwhile, in a mixing bowl, combine flour, salt and pepper to taste. Add melted butter. Mix with a fork until combined.
3. Slowly add ½ cup to ¾ cup chicken stock into the flour mixture. Keep adding until mixture is no longer sticky and can easily form a ball.
4. Once dough is formed, knead about seven times. Take care not to overknead.
5. Roll out flour and lightly dust the top with flour. Cut the dough into triangles.
6. Once the pot of broth is boiling, add the shredded chicken.
7. Drop dumplings in one at a time. Gently stir.
8. Once all the dumplings are dropped in the pot, simmer for 30 to 45 minutes until they are tender.
