No crust pizza bites

Everyone knows the best part of the pizza all those cheesy toppings. When I was a kid, I regularly pulled off the cheese, leaving the crust behind as I ate only the good stuff. Which got me thinking - why should I have to be a kid to skip the crust altogether (and all the carbs that come with it)? The recipe below uses muffin tins to accomplish just that - genius!
This is a great way to enjoy pizza if you're on a low-carb diet like Atkins or Keto. We use thick-cut Canadian bacon, but you could use ham, pepperoni, or sausage patties, too! If you load 'em up with lots of greens, you'll even sneak in an extra serving of vegetables!

No crust pizza bites

Cooking spray
36 slices Canadian bacon
3/4 cup marinara sauce
2 cups spinach, chopped
2 cups mozzarella cheese
Preheat the oven to 350 degrees F. Lightly grease a 12-cup muffin tin with the cooking spray.
Layer three slices of Canadian bacon in each muffin cup, overlapping them slightly. They will come over the sides of the muffin cup.
Place 1 tablespoon of marinara sauce in each cup, spreading it around lightly.
Add 2 tablespoons of the spinach, then 2 tablespoons of cheese, to each cup. They will be fully loaded.
Bake for 25-30 minutes, until the cheese is melted and golden brown.
Pop the no crust pizza bites out using a fork and enjoy
