Sandwiches are the easiest on-the-go meal: pack them in lunchboxes, put them in picnic baskets, place one in a napkin and settle down with a book or a magazine and enjoy a relaxing lunch.
But when you're going on a low carb diet, however, sandwiches pretty much feel off-limits. Here's the good news: they don't have to be! Swap out the bread for lettuce and fill that wrap up with all the good things you'd normally put in a sandwich (peanut butter and jelly excluded). Look to these ideas below for inspiration.

1. Taco lettuce wrap (h/t The Taylor House)
With this wrap, you can still enjoy all of your favorite Mexican flavors with none of the carby-guilt--that's super bueno!
2. Spicy shrimp and avocado lettuce wraps (h/t The Garlic Diaries)
This wrap has it all: spicy and cool, crispy and soft, tangy and sweet. What's not to like? Of course, you can decrease the heat of the spices and switch the jalapeno slices for green pepper slices if you aren't a hot-and-spicy fan.
3. Korean beef lettuce wraps (h/t the Complete Savorist)
This blogger found inspiration in the traditional bulgogi and added a few of her own twists in order to create a sweet and saucy meal. Bonus: if you want to serve the meat as an entree, you can simply set a platter out along with a bowl of rice and plate of lettuce leaves and let your guests (or family) choose how they want to dish up! Double bonus: if you have ever made any kind of homemade Asian dish before, you likely have all the ingredients you need on hand.
4. The best ever pork lettuce wraps (h/t Yummy Healthy Easy)
Not only is this tasty and low-carb, but it comes together in mere minutes and you only need one pan to cook it in! Winner-winner, lettuce-wrap dinner.
5. Curried chickpea salad wraps (h/t Naturally Ella)
This is the new version of the curried chicken salad, but it packs, even more, flavor--add celery and golden raisins for added texture and flavor.
6. Sticky Sriracha meatball lettuce wraps (h/t The Girl on the Bloor)
With this dish, you have the option to make the meatballs ahead of time (freezer-friendly!). It's ok if you don't--the entire meal comes together in less than 30 minutes.
7. P. F. Chang's chicken lettuce wraps (h/t Damn Delicious)
For those of us who don't live anywhere near a P.F. Chang's, this recipe is a gift. It's easy on your schedule and your wallet, and it's a great way to put that ground chicken you found on sale to use.
8. Low carb lettuce wraps (h/t Rob Riches)
Ground turkey, carrots, cabbage, red pepper, avocado, and cheese--the makings of a satisfying lunch minus all the bad carbs. The handy video tutorial shows you how it all comes together.
