Whether you call them crawfish, crayfish, or "mudbugs", crawfish are a Louisiana delicacy. But, don't mistake them for their larger cousins, the lobster. These little red pinchers are in a league of their own.
Here in Louisiana, families treasure memories of crawfish boils, where thousands of crawfish are laid onto a picnic table lined with newspaper, while families and friends feast on crawfish together. That's how we pass a good ole' time.

Now, the tradition is spreading throughout the Southern US and beyond. You can whip up a crawfish boil with the help of these recipes. I included a couple of "after the crawfish boil" recipes to help you know what to do with all that leftover crawfish, if you dare have any.
