Tortellini is a quick dish to make when you need something hot and delicious on the table in no time flat. Tortellini in the refrigerated section of the store is quicker to cook than normal pasta. In the recipe below, in the time it takes for those little bundles of pasta to float to the surface of the water, dinner will be ready.
The secret is using seasoned Italian sausage to make the bulk of the sauce. All you have to do is cut the sausage into sections, cook it and toss it with the cooked tortellini and a few other odds and ends, and dinner is served. You won't even need to season with salt; the salt from the ricotta, sausage and Parmesan cheese will be more than enough.

1 pound tortellini
4 links Italian sausage
1/4 cup ricotta cheese
1/4 cup Parmesan cheese, grated
black pepper
Cook the tortellini according to package instructions.
Cut the sausage into four pieces each. Cook in a skillet until browned on all sides and set aside.
When the tortellini is cooked, add the ricotta cheese, heavy cream and Parmesan cheese, and toss to coat.
Season with a touch of black pepper and add the cooked sausage.
Toss together and serve.
