How to make low-carb pepperoni chicken pizza bake

Print this recipe
Sometimes you want the heartiness of pizza but you don't want to actually eat pizza because it's not good for the waistline. Although many hacks exist to give you the taste of pizza, often these just involve cheese, sauce and pepperoni. That's not very filling if you're in the mood for a big meal after a long day. With the recipe below, you can have heartiness and deliciousness all in one when a pizza craving strikes.
That's because all the goodness of pizza toppings – the cheese, the sauce and the pepperoni – all sits on top of a bed of chicken. You still get the heartiness, but it's all protein without the carbs. The chicken is also fully cooked before this casserole heads into the oven, so you can use whatever kind you like. Buy sliced packages of real roasted chicken from the store or roast whole breasts or thighs. Whatever you decide, you'll still get all the goodness without the guilt.
