Prosciutto, Apple and Gruyere Grilled Cheese

8 slices sourdough bread
2 tablespoons softened butter
8 ounces Gruyere cheese, grated
1 granny smith apple, thinly sliced
4 slices prosciutto, halved
Spread butter on both sides of the bread.
Evenly divide the cheese over the bread slices. Lay one layer of apple slices over half of the bread slices, then top with a layer of prosciutto. Top with the other bread slices.
Heat a non-stick skillet over medium heat. Place the sandwiches in the skillet (working in batches if needed). Cook for 4 minutes per side, pressing down occasionally with a spatula.
Remove the sandwiches from the skillet, slice into triangles and serve.
