The best mealtime salads are easy to toss together and loaded with protein, fiber, and vitamins, and they're delicious, too. The recipe below is all that and more. It combines creamy, rich avocado with hearty and healthy chickpeas for a wrap filling that will truly fill you up.
If you want to make this both more “salady” and more filling, add diced bell peppers, carrots, cucumber, or any other crunchy veggies you like. I love this served in crisp lettuce leaves, but you could use kale, collard greens, or a tortilla or other grain-based wrap instead.

Vegetarian Avocado Chickpea Lettuce Wraps
1 avocado, diced
1 (15-ounce) can chickpeas, drained and rinsed
1 tablespoon freshly squeezed lemon juice
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
6 large lettuce leaves
1 large tomato, thinly sliced
Handful of alfalfa sprouts
4 scallions, thinly sliced
In a medium bowl, mash the avocado with a fork. Add the chickpeas, then mash them into the avocado until the mixture is a chunky puree. Stir in the lemon juice, salt, and pepper.
Lay the lettuce leaves flat on your work surface, then spoon the filling on top, dividing equally among the lettuce. Top each with tomato slices, sprouts, and scallions. To serve, roll up the lettuce leaves around the filling.
