How to make a low-carb avocado, strawberry and goat cheese sandwich

Sandwiches may not sound like the most exciting meal, but when you’ve been eating low-carb for a while, you may really start to miss this old lunchtime standby. I’ve found lots of delicious recipes for low-carb sandwich bread online and they’re perfect for making the recipe below – an open-faced sammie that combines creamy avocado with sweet, juicy strawberries and tangy goat cheese.
Adding a drizzle of syrupy, tart-sweet aged balsamic vinegar (or a balsamic vinegar reduction) takes this recipe to a whole new level. If you don’t want to pony up for a pricy bottle of aged balasamic, you can make your own reduction with regular balsamic vinegar. Just bring the vinegar to a simmer over medium-low heat and cook until it becomes syrupy.

Low-Carb Strawberry, Avocado and Goat Cheese Sandwiches

4 slices low-carb sandwich bread, toasted
2 avocados, peeled, pitted and mashed
1 tablespoon freshly squeezed lemon juice
1/4 teaspoon salt
8 strawberries, sliced
1/2 cup crumbled goat cheese
freshly ground black pepper
2 tablespoons aged balsamic vinegar or balsamic reduction (optional)
In a medium bowl, stir together the mashed avocado, lemon juice and salt.
Spread the avocado mixture onto the toasted bread, dividing evenly.
Arrange the sliced strawberries on top of the avocado and top with the goat cheese.
Serve immediately garnished with freshly ground black pepper.
Drizzle the balsamic reduction over the top, if using.
