Additionally, it’s a great dish to make in advance and reheat later, making it perfect for meal prep.
Growing up, my mother used to make beef tips and noodles as a special treat. She would always make sure to slow cook the beef until it was fork-tender and then mix it with homemade gravy. Slow Cooker Beef Tips
Ingredients:
- 2 lbs beef chuck roast, cut into bite-sized pieces
- 1 onion, chopped
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp dried thyme
- 1/4 cup all-purpose flour
- 2 cups beef broth
- 1 cup sliced mushrooms
- 2 tbsp cornstarch
- salt and pepper to taste
Instructions:
1. In a slow cooker, combine beef, onion, garlic powder, paprika, thyme, salt, black pepper, and flour.
For better taste, you'll want to brown the meat before putting into slow cooker.
2. Pour beef broth over beef.
3. Cover and cook on low for 6-8 hours or until beef is tender.
4. In a small bowl, mix cornstarch with 2 tablespoons of water.

5. Add cornstarch mixture to slow cooker and mix well.
6. Add mushrooms and cook on high for additional 15-20 minutes or until gravy has thickened.
7. Serve over noodles, rice, or mashed potatoes, and enjoy!
