4. Reduce the heat and let it simmer, covered, for 15 minutes.
5. Remove the saucepan from the heat and let it cool.
6. Add the sliced onions and the boiled eggs to the mixture, making sure the eggs are fully submerged.
7. Seal the jar tightly and let it sit in the fridge for at least 24 hours to pickle properly.
8. Serve the mustard pickled eggs directly from the jar or slice them into halves or quarters.
