Teriyaki Chicken Casserole
Ingredients:
1 lb boneless, skinless chicken breasts, bite-sized
1 bag (12 oz) stir-fry vegetables
3/4 cup soy sauce
1/4 cup brown sugar
1/2 cup water
1/2 tsp minced garlic
1/2 tsp ground ginger
3 cups cooked rice
2 tbsp cornstarch + 2 tbsp water
Instructions:
1. Preheat oven to 350°F (175°C).
2. Simmer soy sauce, water, brown sugar, ginger, and garlic in a saucepan.
3. Mix cornstarch and water, add to sauce to thicken. Set aside.
4. Coat chicken with half of the sauce.
5. Spread cooked rice in greased casserole dish.
6. Layer marinated chicken, then stir-fry vegetables.
