Southern Fried Potatoes & Sausages Recipe:
Ingredients:
- 5 potatoes, washed and diced into small cubes
- 1 pound sausages of your choice (such as smoked sausage or breakfast sausage), sliced into bite-sized pieces
- 1 onion, finely chopped
- Vegetable oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika (optional)
- Salt and pepper to taste
- 1/2 cup water
Instructions:
1. In a large skillet or frying pan, heat the vegetable oil over medium-high heat.
2. Add sliced sausages and brown.
3. Add potatoes, onions, water, more vegetable oil, garlic powder, paprika (if using), salt and pepper to taste.
4. Cook until water boils. Then reduce heat to medium and low and cover skillet with lid. Allow the potatoes to cook for about 10 minutes, stirring occasionally to prevent sticking.
5. Take the lid off and continue cooking over medium-high heat for 10 mins or so. Continue to stir as necessary and cook until potatoes are tender.

Remove from heat and let the dish rest for a couple of minutes. Garnish with fresh parsley or chives if desired.
