Slow Cooker Easy Chicken Parmesan
Ingredients:
For the Chicken:
4 boneless, skinless chicken breasts
1 cup all-purpose flour
1 cup bread crumbs
1 cup grated Parmesan cheese, divided
1/2 cup grated mozzarella cheese
2 eggs, beaten with 1/2 cup water
1 tbsp dried Italian seasoning (replaces basil, oregano, garlic powder, onion powder)
1 tsp salt
1/2 tsp black pepper
For the Sauce:
28 oz crushed tomatoes
1 tbsp dried Italian seasoning
Salt and black pepper to taste
For the Pasta:
2 2/3 cups uncooked pasta of choice (i.e. penne)
1/2 cup water
Directions:
1. Combine bread crumbs, 1/2 cup Parmesan, Italian seasoning, salt, and pepper in a bowl.
2. Place flour in one bowl and beaten eggs in another.
3. Flatten chicken to an even thickness, then dredge in flour, dip in egg, and coat in bread crumb mixture.
4. Mix crushed tomatoes and Italian seasoning in a slow cooker. Add chicken on top. Cover and cook on low for 4 hours.
5. Remove chicken, add pasta and water to the slow cooker, and stir. Cook covered for 20 minutes.
6. Return chicken to slow cooker, sprinkle with mozzarella and remaining Parmesan. Cook covered for another 20-30 minutes until cheese melts and pasta is cooked.
