Cowboy Meatloaf and Potato Casserole is the perfect dish to spice up your weekly dinner menu. This heartwarming meal combines the rich flavors of a classic meatloaf with the creamy comfort of mashed potatoes, all baked into one delightful casserole. Originating from hearty, rustic cowboy cuisine, this dish is designed to fill you up after a long day. It's particularly great for those busy evenings where you crave something satisfying yet straightforward to prepare.
This casserole is practically a meal in itself, but if you're looking to round it out, a simple green salad or some steamed green beans work wonderfully. 1 egg
Salt and pepper to taste
2 lbs potatoes, peeled and cubed
1/2 cup milk
2 tablespoons butter
1 cup shredded cheddar cheese
Directions
Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
In a large bowl, combine ground beef, breadcrumbs, onion, ketchup, mustard, Worcestershire sauce, and egg. Season with salt and pepper, and mix until well combined.
Press the meat mixture into the bottom of the prepared baking dish, forming an even layer.

Add milk and butter to the potatoes and mash until smooth. Season with salt and pepper to taste.
Spread the mashed potatoes evenly over the meatloaf mixture in the baking dish.
Sprinkle the shredded cheese over the top of the mashed potatoes.

Variations & Tips
For a little twist, try mixing some cooked bacon or diced green peppers into the meatloaf mixture. You can also switch up the cheeses; a mix of cheddar and Monterey Jack gives a nice depth. To keep things light, consider using ground turkey instead of beef and swapping out the potatoes for sweet potatoes or even a cauliflower mash for a lower carb option.
