Ingredients
2 lbs of potatoes, peeled and sliced
1 cup shredded cheddar cheese
1/2 cup cooked and crumbled bacon
1/2 cup sour cream
1/4 cup mayonnaise
1/4 cup green onions, chopped
1 teaspoon garlic powder
Salt and pepper to taste
1/2 cup crispy fried onions (for topping)
Directions
1. Preheat your oven to 350°F (175°C).
2. In a large mixing bowl, combine the sour cream, mayonnaise, garlic powder, chopped green onions, salt, and pepper.
3. Add the sliced potatoes to the bowl and stir until they are evenly coated with the mixture.
4. Grease a baking dish and layer half of the potatoes in the bottom.
5. Sprinkle half of the shredded cheddar cheese and half of the crumbled bacon over the potatoes.
6. Add the remaining potatoes, then top with the remaining cheese and bacon.
7. Cover the dish with aluminum foil and bake for 60 minutes. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden brown.
