Slow Cooker Caprese Chicken

Ingredients
4 boneless, skinless chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried oregano
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, drained
1/4 cup balsamic vinegar
2 tablespoons olive oil
2 cups fresh cherry tomatoes, halved
8 oz fresh mozzarella cheese, sliced or cubed
1/4 cup fresh basil leaves, chopped
Directions
Season the chicken breasts with salt, pepper, and dried oregano.
Place the seasoned chicken breasts in the slow cooker.
Sprinkle the minced garlic over the chicken.
Pour the drained diced tomatoes and balsamic vinegar over the chicken.
Drizzle the olive oil on top.
Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is cooked through and tender.
About 30 minutes before serving, add the fresh cherry tomatoes and fresh mozzarella to the slow cooker. Cover and allow them to warm through.
