Slow Cooker Swiss Chicken Casserole is a dish that feels like a hug from the inside out, especially on a chilly evening. The roots of this casserole trace back to the practical and hearty cooking style of the Midwest where making use of what’s on hand and cooking
This dish is delightful on its own, but I like to serve it alongside a crisp green salad tossed with apples and walnuts, and some freshly baked dinner rolls to complete the meal. The lightness of the salad balances the creaminess of the casserole beautifully, making it a well-rounded dinner.

Variations & Tips
For a bit of a crunch, you can add some slivered almonds to the stuffing mix before cooking. If you are fond of mushrooms, layer in some canned or fresh sautéed mushrooms between the chicken and cheese. For those who prefer a lower carbohydrate option, replace the stuffing mix with a cauliflower rice mixture seasoned similarly.
