Slow Cooker Cheesy Chicken Penne
Servings: 6
Ingredients
1 lb boneless, skinless chicken breasts
1 tsp garlic powder
1 tsp onion powder
1 tsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
2 cups chicken broth
1 can (10.5 oz) cream of chicken soup
1 can (10 oz) diced tomatoes with green chilies
2 cups shredded cheddar cheese
1 lb penne pasta, cooked and drained
1/4 cup chopped fresh parsley (optional)
Directions
1. Place the chicken breasts in the bottom of your slow cooker. Sprinkle with garlic powder, onion powder, Italian seasoning, salt, and black pepper.
2. Pour the chicken broth and cream of chicken soup over the seasoned chicken. Add the can of diced tomatoes with green chilies.
3. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.
4. Once the chicken is cooked, remove it from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker.
5. Stir in the shredded cheddar cheese until melted and well combined.
6. Add the cooked penne pasta to the slow cooker and stir until the pasta is evenly coated with the cheesy chicken mixture.
7. If desired, sprinkle with chopped fresh parsley before serving for a pop of color and freshness.
