Ingredients
8 oz angel hair pasta
1 lb shrimp, peeled and deveined
1 bunch asparagus, trimmed and cut into 2-inch pieces
3 cloves garlic, minced
2 tbsp olive oil
1/2 cup chicken broth
1/4 cup grated Parmesan cheese
Salt and pepper to taste
Juice of 1 lemon
1 tbsp fresh parsley, chopped
Directions
Cook the angel hair pasta according to package instructions. Drain and set aside.
In a large pan, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1 minute.
Add the shrimp to the pan and cook until they turn pink, about 2-3 minutes per side. Remove the shrimp and set aside.
In the same pan, add the asparagus and cook for about 4-5 minutes until tender but still crisp.
