Mac and Cheese Meatloaf Casserole
Servings: 6-8 servings
Ingredients
1 lb ground beef
1 lb ground pork
1 cup breadcrumbs
1 onion, finely chopped
2 cloves garlic, minced
2 eggs
1 cup ketchup
1 tbsp Worcestershire sauce
Salt and pepper to taste
2 cups elbow macaroni
2 cups shredded cheddar cheese
2 tbsp butter
2 tbsp flour
2 cups milk
1/2 tsp mustard powder
1/4 tsp smoked paprika
Chopped parsley for garnish (optional)
Directions
Preheat your oven to 375°F (190°C).
In a large bowl, combine the ground beef, ground pork, breadcrumbs, onion, garlic, eggs, 1/2 cup ketchup, Worcestershire sauce, salt, and pepper. Mix until well combined.
Press the meat mixture into a greased 9x13-inch baking dish, forming an even layer. Bake for 30 minutes.
While the meatloaf is baking, cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.
In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, forming a roux.
Gradually whisk in the milk, adding the mustard powder and smoked paprika. Continue to cook, stirring constantly, until the sauce thickens.
Remove the saucepan from the heat and stir in the shredded cheddar cheese until melted and smooth.
Combine the cooked macaroni with the cheese sauce, stirring until the pasta is evenly coated.
Remove the meatloaf from the oven. Spread the remaining 1/2 cup of ketchup over the top, then spread the mac and cheese evenly over the meatloaf.
Return the dish to the oven and bake for an additional 20 minutes, or until the top is bubbly and golden.
Let the casserole rest for 10 minutes before cutting. Garnish with chopped parsley if desired. Serve and enjoy!

Variations & Tips
For a spicier version, add some chopped jalapeños or a dash of hot sauce to the meat mixture. If you prefer a leaner option, use ground turkey or chicken instead of beef and pork. Feel free to experiment with different cheeses for the mac and cheese layer; a combination of mozzarella and sharp cheddar can add a delightful depth of flavor. For a gluten-free version, use gluten-free breadcrumbs and pasta.
