Taco Grilled Cheese Sandwich
Servings: 2 servings

Ingredients
4 slices of bread (sourdough or your favorite kind)
1 cup cooked taco meat (can be ground beef, chicken, or turkey)
1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
2 tablespoons butter, softened
Optional: 2 tablespoons salsa
Optional: 1 avocado, sliced
1 cup cooked taco meat (can be ground beef, chicken, or turkey)
1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
2 tablespoons butter, softened
Optional: 2 tablespoons salsa
Optional: 1 avocado, sliced
Directions
1. Start by preheating a non-stick skillet or griddle over medium heat.
2. Butter one side of each slice of bread generously. This will give you that golden, crispy crust we all love.
3. Place two slices of bread buttered-side down in the skillet.
4. Sprinkle half of the shredded cheese evenly over the bread slices in the skillet.
5. Spread the cooked taco meat over the cheese.
6. If you want to add some salsa or avocado slices, this is the moment! Spread a thin layer of salsa over the meat or add the avocado slices.
7. Sprinkle the remaining cheese over the taco meat (and optional toppings), then top with the other slices of bread, buttered-side up.
8. Cook the sandwiches until the bottom slice is golden brown and crispy, which should take about 3-4 minutes.
9. Carefully flip the sandwiches and cook the other side until it’s also golden brown and the cheese is fully melted, another 3-4 minutes.
10. Remove the sandwiches from the skillet, let them cool for a minute or two, then slice in half and serve immediately.

Variations & Tips
For a vegetarian version, you can substitute the taco meat with seasoned black beans or lentils. If you're feeling adventurous, try adding some jalapeño slices or a sprinkle of crushed red pepper for extra heat. For a lighter option, use whole grain bread and a reduced-fat cheese. And if you want to up the cheesy goodness, mix in a little cream cheese with the shredded cheese before adding it to the sandwich.
