Creamy Garlic Parmesan Brussels Sprouts with Bacon
Servings: 4
Ingredients
1 lb brussels sprouts, halved
4 slices bacon, chopped
2 cloves garlic, minced
1/2 cup heavy cream
1/2 cup grated parmesan cheese
Salt and pepper to taste
1 tablespoon olive oil
Directions
1. Preheat your oven to 400°F (200°C).
2. In a large oven-safe skillet, cook the bacon over medium heat until it’s crispy. Remove the bacon and set it aside, but leave the bacon fat in the skillet.
3. Add the halved brussels sprouts to the skillet, cut side down. Drizzle with olive oil, and season with salt and pepper. Cook for about 5-7 minutes, until they start to brown.
4. Add the minced garlic to the skillet, and cook for another 2 minutes until fragrant.
5. Pour the heavy cream over the brussels sprouts and stir in the parmesan cheese. Let it simmer for a few minutes until the sauce starts to thicken.
6. Sprinkle the cooked bacon over the top of the brussels sprouts.
7. Transfer the skillet to the preheated oven and bake for 15 minutes, until the brussels sprouts are tender and the sauce is bubbling and golden brown.

Variations & Tips
If you want to lighten this dish up a bit, you can substitute the heavy cream with half-and-half. For a vegetarian option, simply omit the bacon and use a bit of butter or olive oil to cook the brussels sprouts. You can also sprinkle some toasted almonds or walnuts on top for added crunch.
