2 packages of Oreo cookies, crushed
1 box funfetti cake mix, dry
3 cups heavy whipping cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup rainbow sprinkles
1/4 cup milk
Directions
1. In a large mixing bowl, whip the heavy whipping cream, powdered sugar, and vanilla extract together until soft peaks form.
2. Gently fold in the dry funfetti cake mix and 3/4 cup of the rainbow sprinkles until well combined and fluffy.
3. Dip each Oreo cookie briefly in the milk to soften it slightly. Arrange a layer of Oreo cookies on the bottom of a 9x13 inch baking dish.
4. Spread about a third of the whipped cream mixture over the layer of Oreos, smoothing it out evenly.
5. Repeat the layers two more times, ending with a final layer of the whipped cream mixture on top.
6. Sprinkle the remaining rainbow sprinkles over the top layer for a festive garnish.
7. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld and the cake to set.
