1 tablespoon cornstarch
1 egg (for egg wash)
1 tablespoon water

Directions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a medium bowl, combine the diced apples, caramel sauce, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Mix well until the apples are evenly coated.
Roll out each pie crust on a lightly floured surface and cut into 6-inch circles. You should get about 3 circles from each pie crust.
Place a generous spoonful of the apple mixture onto one half of each circle, leaving a border around the edge.
Fold the dough over the filling to create a half-moon shape and press the edges together with a fork to seal.
In a small bowl, whisk together the egg and water to make the egg wash. Brush the tops of the empanadas with the egg wash.
Sprinkle a little granulated sugar on top of each empanada for added sweetness and crunch.
Place the empanadas on the prepared baking sheet and bake for 20-25 minutes, or until golden brown and crispy.
