Lasagna roll-ups are my go-to for a comforting, family-friendly meal that can be prepared ahead and baked when you're ready. This dish brings together the classic flavors of traditional lasagna but with a fun twist, making it perfect for those busy weeknights when you want something a bit special. Plus, it magically combines two of my favorite things: rolled-up pasta and beefy, cheesy goodness! Trust me, the whole family will love this one.
Pair these baked beefy lasagna roll-ups with a simple green salad and some garlic bread for a complete meal. If you're in the mood for something a bit heartier, roasted vegetables or a light minestrone soup would also be a great companion. And, of course, a nice glass of red wine like a Chianti or Merlot will really elevate your dinner experience.

Baked Beefy Lasagna Roll-Ups
Servings: 6

Ingredients
12 lasagna noodles
1 tablespoon olive oil
1 pound ground beef
1 small onion, finely chopped
2 cloves garlic, minced
2 cups marinara sauce
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
1 cup ricotta cheese
1 egg, lightly beaten
1/2 cup grated Parmesan cheese
2 cups shredded mozzarella cheese
Fresh parsley, chopped (optional, for garnish)
1 tablespoon olive oil
1 pound ground beef
1 small onion, finely chopped
2 cloves garlic, minced
2 cups marinara sauce
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
1 cup ricotta cheese
1 egg, lightly beaten
1/2 cup grated Parmesan cheese
2 cups shredded mozzarella cheese
Fresh parsley, chopped (optional, for garnish)
Directions
1. Preheat your oven to 375°F (190°C).
2. Cook the lasagna noodles according to package instructions. Drain and lay them flat on a sheet of parchment paper to prevent sticking.
3. Heat the olive oil in a large skillet over medium heat. Add the ground beef, onion, and garlic. Cook until the beef is browned and the onion is soft, about 5-7 minutes.
4. Stir in the marinara sauce, oregano, basil, salt, and pepper. Let the mixture simmer for 5 minutes, then remove from heat.
5. In a medium bowl, mix the ricotta cheese, egg, Parmesan cheese, and a pinch of salt and pepper until well combined.
6. Spread about 2-3 tablespoons of the ricotta mixture on each lasagna noodle. Top with a spoonful of the beef mixture.
7. Roll up each lasagna noodle tightly and place seam-side down in a greased baking dish.
8. Pour the remaining beef mixture over the roll-ups and sprinkle with shredded mozzarella cheese.
9. Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for another 10 minutes, or until the cheese is bubbly and golden.
10. Let the lasagna roll-ups rest for a few minutes before serving. Garnish with fresh parsley, if desired.

Variations & Tips
For a vegetarian version, substitute the ground beef with a mixture of sautéed vegetables like mushrooms, zucchini, and bell peppers. You can also use ground turkey or chicken for a lighter version. If you prefer a spicier kick, add some red pepper flakes to the meat sauce. For meal prep, assemble the roll-ups the night before and store them in the fridge. Just bake as directed when you're ready to eat.
