1 tablespoon olive oil
1 medium onion, finely chopped
2 carrots, finely chopped
2 celery stalks, finely chopped
4 garlic cloves, minced
1 pound ground chicken
1/4 cup tomato paste
1 (28-ounce) can crushed tomatoes
1 cup chicken broth
1/2 cup whole milk
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon red pepper flakes (optional)
Salt and pepper to taste
1/4 cup freshly grated Parmesan cheese
Fresh basil, for garnish
Directions
1. Heat the olive oil in a large skillet over medium heat. Add the onion, carrots, and celery, and cook until softened, about 5 minutes.
2. Add the garlic and cook for another minute until fragrant.
3. Add the ground chicken and cook until browned, breaking it up with a spoon as it cooks.
4. Stir in the tomato paste and cook for 2 minutes.
5. Transfer the mixture to the slow cooker and add the crushed tomatoes, chicken broth, whole milk, dried oregano, dried basil, red pepper flakes (if using), salt, and pepper.
