1 butternut squash, peeled and diced
2 tablespoons olive oil
Salt and pepper to taste
1 pound turkey sausage
1 box jumbo pasta shells
1 cup ricotta cheese
1 egg
1/2 cup grated Parmesan cheese
1 teaspoon dried basil
1 teaspoon dried oregano
2 cups marinara sauce
1 cup shredded mozzarella cheese

1. Preheat your oven to 375°F (190°C).
2. Place the diced butternut squash on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the preheated oven for 25-30 minutes or until tender.
3. While the squash is roasting, cook the turkey sausage in a skillet over medium heat until fully cooked. Set aside to cool slightly.
4. Cook the jumbo pasta shells according to package instructions. Drain and let them cool.
5. In a mixing bowl, combine the roasted butternut squash, cooked turkey sausage, ricotta cheese, egg, Parmesan cheese, basil, and oregano. Mix until well combined.
