This slow cooker Amish ham and potato casserole is a comforting dish that brings a taste of the countryside right into your kitchen. Growing up in the Midwest, casseroles were a staple in our household, and this one is a favorite because it combines the heartiness of ham with the creamy goodness of potatoes. It's perfect for those busy weekdays when you want to come home to a warm, home-cooked meal without spending hours in the kitchen.
This casserole pairs wonderfully with a simple green salad or some steamed green beans to add a bit of freshness to your meal. If you're feeling indulgent, serve it alongside some warm, crusty bread to soak up all the creamy sauce. A glass of iced tea or a light white wine would complement this dish beautifully.

Variations & Tips
For a bit of a kick, you can add some diced jalapeños or a pinch of cayenne pepper to the soup mixture. If you prefer a different cheese, Swiss or Monterey Jack would work well too. For a vegetarian version, simply omit the ham and add some sliced mushrooms or bell peppers for extra flavor and texture. You can also prepare the ingredients the night before and store them in the fridge, so all you have to do is assemble and start the slow cooker in the morning.
