Variations & Tips
For a spicier kick, try adding some diced jalapeños or a dash of hot sauce to the mix. If you have picky eaters, you can omit the black beans or corn and add in some diced bell peppers or mushrooms instead. For a gluten-free version, use gluten-free pasta. You can also swap the cheddar cheese for mozzarella or pepper jack for a different flavor profile.
