Slow Cooker Amish Chicken and Corn Soup
Servings: 6
Ingredients
1 1/2 pounds boneless, skinless chicken thighs
4 cups chicken broth
2 cups fresh or frozen corn kernels
2 large carrots, diced
2 celery stalks, diced
1 medium onion, chopped
2 cloves garlic, minced
1 teaspoon dried thyme
1 bay leaf
Salt and pepper to taste
1/2 cup heavy cream
2 tablespoons fresh parsley, chopped
Directions
Place the chicken thighs in the bottom of the slow cooker.
Add the chicken broth, corn, carrots, celery, onion, garlic, thyme, bay leaf, salt, and pepper.
Cover and cook on low for 6-7 hours or until the chicken is tender and cooked through.
Remove the chicken from the slow cooker and shred it with two forks.
Return the shredded chicken to the slow cooker.
Stir in the heavy cream and let the soup heat through for another 15-20 minutes.
Remove the bay leaf before serving.
Serve hot, garnished with fresh parsley.
