Creamy Garlic Chicken Rigatoni
Servings: 4
Ingredients
12 oz rigatoni pasta
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
4 cloves garlic, minced
1 cup heavy cream
1 cup chicken broth
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
Salt and pepper to taste
2 tablespoons chopped fresh parsley (optional)
Directions
Cook the rigatoni pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a simmer.
Add the Parmesan cheese and Italian seasoning, stirring until the cheese is melted and the sauce is smooth.
Return the cooked chicken to the skillet, along with the cooked rigatoni. Toss everything together until the pasta and chicken are well coated in the sauce.
Simmer for an additional 2-3 minutes to allow the flavors to meld together.
Garnish with chopped fresh parsley, if desired, before serving.

Variations & Tips
For a lighter version, you can substitute the heavy cream with half-and-half or a mixture of milk and Greek yogurt. If you have picky eaters, consider adding some vegetables like spinach or peas to the dish for extra nutrition. You can also swap the chicken for shrimp or even tofu for a vegetarian option. For a bit of heat, add a pinch of red pepper flakes to the sauce.
