Brussels sprouts and bacon casserole is one of those dishes that perfectly marries comfort and flavor, making it a staple in my kitchen, especially during the cooler months. Growing up in the Midwest, casseroles were a regular feature at family gatherings, and this one combines the earthy goodness of Brussels sprouts with the savory delight of bacon. It's a dish that feels like a warm hug after a long day, and it's surprisingly easy to whip up, even on a busy weeknight.
This casserole pairs beautifully with a simple green salad to balance out the richness of the bacon and cheese. You might also consider serving it alongside some crusty bread to soak up any delicious juices. For a heartier meal, roasted chicken or a grilled steak would complement the flavors wonderfully.

Brussels Sprouts and Bacon Casserole
Servings: 4-6 servings

Ingredients
1 pound Brussels sprouts, trimmed and halved
6 slices of bacon, chopped
1 cup shredded cheddar cheese
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
1 tablespoon olive oil
Salt and pepper to taste
6 slices of bacon, chopped
1 cup shredded cheddar cheese
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
1 tablespoon olive oil
Salt and pepper to taste
Directions
Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the pan.
Add the olive oil to the skillet and heat over medium-high heat. Add the Brussels sprouts, cut side down, and cook until they start to brown, about 5-7 minutes.
Transfer the Brussels sprouts to a baking dish. Sprinkle the cooked bacon over the top.
In a small bowl, mix together the heavy cream and cheddar cheese. Pour this mixture over the Brussels sprouts and bacon.
Sprinkle the grated Parmesan cheese on top.
Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and golden brown.

Variations & Tips
For a lighter version, you can substitute turkey bacon and use half-and-half instead of heavy cream. If you're a fan of spice, add a pinch of red pepper flakes to the cream mixture for a little kick. You can also toss in some chopped onions or garlic with the Brussels sprouts for extra flavor. For a vegetarian twist, omit the bacon and add some toasted nuts like almonds or walnuts for crunch.
