Cowboy soup is a hearty, comforting dish that brings the flavors of the American West to your table. This creamy, chunky, and savory soup is perfect for those chilly Midwest evenings when you're craving something warm and filling. The origins of cowboy soup can be traced back to the days of cattle drives, where cowboys needed a simple yet nourishing meal that could be made with whatever ingredients were on hand. Today, it's a versatile dish that can be customized to suit your taste, making it a favorite in many households.
Cowboy soup pairs wonderfully with a side of warm, crusty bread or cornbread to soak up the creamy broth. A simple green salad with a tangy vinaigrette can provide a refreshing contrast to the richness of the soup. For a more indulgent meal, consider serving it with a side of cheesy garlic bread or a baked potato.

Cowboy Soup
Servings: 6
Ingredients
1 pound ground beef
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
2 cups beef broth
1 can (14.5 ounces) diced tomatoes
1 can (15 ounces) kidney beans, drained and rinsed
1 can (15 ounces) corn, drained
1 cup heavy cream
1 teaspoon chili powder
1 teaspoon cumin
Salt and pepper to taste
1 cup shredded cheddar cheese
2 tablespoons chopped fresh cilantro (optional)
Directions
1. In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
2. Add the chopped onion and minced garlic to the pot, and sauté until the onion is translucent.
3. Pour in the beef broth, diced tomatoes, kidney beans, and corn. Stir to combine.
4. Add the chili powder, cumin, salt, and pepper. Bring the mixture to a simmer and let it cook for about 15 minutes.
5. Reduce the heat to low and stir in the heavy cream. Allow the soup to heat through, but do not let it boil.
6. Just before serving, stir in the shredded cheddar cheese until melted and creamy.
7. Garnish with chopped cilantro, if desired, and serve hot.

Variations & Tips
For a spicier version, add a diced jalapeño or a pinch of cayenne pepper. You can substitute ground turkey or chicken for the beef for a lighter option. If you prefer a thicker soup, add a tablespoon of flour to the onion and garlic mixture before adding the broth. For a vegetarian version, omit the meat and use vegetable broth instead of beef broth. Feel free to experiment with different types of beans or add vegetables like bell peppers or zucchini for extra nutrition.
