4 large russet potatoes
2 tablespoons olive oil
4 cloves garlic, minced
1 cup shredded cheddar cheese
1/2 cup sour cream
2 tablespoons butter
Salt and pepper to taste
2 tablespoons chopped fresh parsley
Directions
Preheat your oven to 400°F (200°C).
Wash and scrub the potatoes thoroughly. Pat them dry with a towel.
Pierce each potato several times with a fork, then rub them with olive oil and sprinkle with salt.
Place the potatoes directly on the oven rack and bake for about 45 minutes, or until they are tender when pierced with a fork.
While the potatoes are baking, melt the butter in a small pan over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Remove from heat.
Once the potatoes are done, remove them from the oven and let them cool slightly.
Cut each potato in half lengthwise and scoop out the insides into a mixing bowl, leaving a thin shell.

Spoon the mixture back into the potato shells, then top with the remaining cheese.
Place the stuffed potatoes on a baking sheet and return them to the oven. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
