Low Carb Loaded Cauliflower Casserole

Ingredients
1 large head of cauliflower, cut into florets
1 cup sour cream
1 cup shredded cheddar cheese
1/2 cup cooked bacon, crumbled
1/4 cup chopped green onions
1/4 cup cream cheese, softened
1 teaspoon garlic powder
Salt and pepper to taste
Directions
Preheat your oven to 375°F (190°C).
Steam the cauliflower florets until tender, about 10 minutes. Drain and let cool slightly.
In a large bowl, mix together the sour cream, cream cheese, garlic powder, salt, and pepper until smooth.
Add the steamed cauliflower to the bowl and gently toss to coat the florets in the creamy mixture.
Transfer the cauliflower mixture to a greased baking dish.
Sprinkle the shredded cheddar cheese evenly over the top.
Top with crumbled bacon and chopped green onions.
Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
