Slow Cooker Amish Chicken Corn Soup

Ingredients
1 1/2 pounds boneless, skinless chicken breasts
6 cups chicken broth
2 cups fresh or frozen corn kernels
2 medium potatoes, peeled and diced
1 medium onion, chopped
2 carrots, sliced
2 celery stalks, sliced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1 bay leaf
1 cup egg noodles
1/4 cup heavy cream (optional)
Chopped fresh parsley for garnish (optional)
Directions
Place the chicken breasts in the bottom of the slow cooker.
Add the chicken broth, corn, potatoes, onion, carrots, celery, salt, pepper, thyme, and bay leaf.
Cover and cook on low for 6-7 hours or until the chicken is cooked through and the vegetables are tender.
Remove the chicken from the slow cooker and shred it with two forks.
Return the shredded chicken to the slow cooker.
Add the egg noodles and cook on high for an additional 20-30 minutes, or until the noodles are tender.
